How to taste mezcal ?
OBSERVE
Shake the mezcal in order to check its transparency, its thickness and its pearls (little bubbles that form on the top of mezcal when it is agitated).
SNIFF
Pour and spread a few drops of mezcal on the back of your hand between the index finger and the thumb. The texture can be rough, oily or dry depending on the mezcal. Then pour a few drops in your palm, rub your hands together in order for the mezcal to warm up and the alcohol to evaporate; bring your hands close to your nostrils in order to discover its flavours.
SMELL
After having discovered the smoky flavours of the agave in your hands, smell the mezcal in the glass holding it in different positions, keeping your mouth open in order to let the air in. The flavour intensifies, creating a real connection in your olfactory memory.
SAVOUR
The first kiss
Dip your lips delicately in order to take a sip, make the mezcal run against your palate, on your tongue and inside your entire mouth. Continue to smell the mezcal to make your tongue salivate and prepare it for the second kiss.
The deep kiss
Take a bigger sip raising your head carefully so the mezcal enters your throat gently and swallow slowly.
The spell
Take another sip of mezcal and after it goes down your throat, breathe deeply and slowly, exhaling through your nose. Feel the symbiosis between your sense of smell and your sense of taste, while discovering all the aromas and flavours.
